Lemon & Dandelion Biscuits | Recipe

Dandelions are easily identifiable by their yellow blooms and basal leaves (leaves which grow from the bottom of the stem only). The flowers grow on single, unbranching, hollow stems and the leaves are lobed and jagged or as I have heard them described ‘deep toothed’. Their leaves are very recognisable, but not as recognisable as the tall yellow flowers that eventually turn into the fluffy seed heads.

But the best thing about them is that they are completely edible. From the roots to the flower and they may offer health benefits too. Dandelions are found in many teas and supplements, where they are added as a natural remedy to support blood sugar management and boost skin, liver, and heart health.

Benefits of Dandelion…

Packed with nutrition

The nutritional value of Dandelion extends to all parts of the plant. from the petals and leaves all the way to the roots. Dandelion is a rich source of fibre and many vitamins and minerals.

Contains potent antioxidants 

Dandelions are a rich source of beta carotene and polyphenol compounds, both of which neutralise harmful free radicals.

Fights inflammation

The Dandelion contains polyphenols which have anti-inflammatory properties.

May reduce cholesterol

Some studies indicate that dandelion reduces cholesterol and triglyceride levels.

Aids blood sugar management

Dandelion contains chicoric and chlorogenic acid that have been shown to reduce blood sugar.

Can lower blood pressure

Dandelion may lower blood pressure as a result of its diuretic effect. It is also an excellent source of potassium.

Promotes liver health

Studies indicate that Dandelion may protect against liver damage, it is also widely known for its diuretic affects also giving it its other name of ‘Piss-en-lit’ or ‘Pissabed’.

Supports healthy digestion

Dandelion is rich in fibre and prebiotic compounds such as inulin — traditionally Dandelions were used to treat constipation and promote gut health.

Boosts immune health

Dandelion has antiviral and antibacterial properties plus supports the gut, known to be a critical part of the immune response.

Healthy bones

A great source of vitamin K.

Could have anticancer effects

Still to be proven, but hopeful studies are underway.

     

    So we should really be eating a little more of this amazing plant. One of our favourite ways to eat it, is ofcourse in biscuits! Dandelion and lemon biscuits! These are super simple and easy to make – perfect for foraging beginners and a fab way to get children foraging too.

    Lemon & Dandelion Biscuits

    Ingredients

    4oz butter. (Vegan butter works too)

    2oz Caster Sugar

    5oz Self Raising Flour

    Juice and rind of of 1 lemon

    Handful of dandelion flowers

    Method

    • Preheat the oven to 180°C /fan 160°C/ gas 4. Lightly butter two baking trays or get out your silicone mats!
    • Measure the butter into a bowl and beat to soften.
    • Gradually beat in the sugar and then the flour.
    • Add the lemon juice and rind as well as the petals from your washed dandelion flowers (try to avoid any green as it’ll add a bitterness to your biscuits)
    • Bring the mixture together with your hands to form a dough.
    • Form the dough into 16 balls about the size of a walnut and place spaced well apart on the prepared baking trays.
    • Dip a fork in a little water and use this to flatten the biscuits.
    • Bake in the preheated oven for 15–20 minutes until a very pale golden. Lift off the baking tray and leave to cool completely on a wire rack.

    You can always experiment with different edible flowers. Lavender and Elderflower works really well, as does Lilac flowers!
