Vegan Valentines Cookies

We love baking in our house. Molly gets so excited and we are such foodies. So, I have decided to start sharing more food/baking related posts. This is one of our favourites that we bake on the regular. Christmas, Easter, Halloween – It can be adapted for every occasion and always tastes great! This time, Its Valentines themed sugar cookies.

For these cookies you will need

200g icing sugar

225g vegan butter

1 1/2 teaspoons vanilla extract

300g plain flour

2 tablespoons cornflour

1 tablespoon baking powder

1 teaspoon bicarbonate of soda

plain flour for dusting

Method

Beat icing sugar and margarine together in a bowl until smooth and creamy. Add vanilla extract and beat until smooth.

Whisk 300g plain flour, cornflour, baking powder and bicarbonate of soda together in a separate bowl. Beat flour mixture into creamed butter mixture on medium-low speed just until mixture is combined. Separate cookie dough into 2 balls and refrigerate for at least 2 hours.

Preheat oven to 180 C / Gas 4.

Dust dough with flour and roll cookie dough out to 1/2cm thick on a work surface. Cut cookies into desired shapes using cutters and arrange on a baking tray.

Bake in the preheated oven until sugar cookies are just beginning to turn brown, 10 to 14 minutes. Let cookies rest on baking tray, 5 to 10 minutes; transfer to a wire rack to cool.

Molly loves decoration the cookies more than anything. I say decorating, A lot of icing was consumed during the decorating process! I set up 4 different coloured icing for her to use as she pleased. There’s nothing like a toddler being super proud of what they have made. You can add sprinkles or sweets – anything you like! We kept it simple with just icing this time round. Safe to say the valentines cookies went down well, Molly asked for a “cookie” at least 3-4 times a day!
