No Bake Easter Cheesecake!

Last week I was browsing Pinterest ( like I do most days ) and I came across this recipe for a no bake Easter cheesecake. Now, I love me a cheesecake. but with a 3 month old who doesn’t really nap in the day anymore, I barely have enough time to go to the loo without her shouting and screaming at me, let alone making a cheesecake.

Oh how I was wrong.

I decided to give this things ago. I planned the timing strategically. Molly had her lunchtime feed, I put her in her swing and turned on Mr Tumble ( she totally has a thing for Mr Tumble ) and got to work.

Ingredients

  • 280 g Digestive Chocolate Biscuits
  • 140 g Butter Unsalted, melted
  • 360 g Mini Cadbury’s Mini Eggs plus 270g to decorate (about 7 small bags in total)
  • 550 ml Double cream plus 50ml to decorate (lightly whipped until it forms soft peaks)
  • 140 g Icing Sugar sifted
  • 2 x 280g Tubs of Philadelphia Cream Cheese Full fat
  • Juice of half a lemon

Instructions

  1. Crush the biscuits until they look like lumpy sand. (I did mind in a food processor because I’m very lazy..)
  2. Mix with the melted butter and press into your 7″ tin.
  3. Chop the 360g of the Mini Eggs in half.
  4. Combine the whipped cream, icing sugar, cream cheese, lemon juice and chopped Mini Eggs. Fold in gently until fully combined.
  5. Smooth on top of the biscuit base and flatten the top with the back of a spoon or a palette knife if you have one.
  6. Chill for 2 hours or even better, over night.
  7. Use my knife tip (above) to remove the cheesecake from the tin.
  8. Plop the remaining whipped cream on top of the cheesecake and pile on the remaining Mini Eggs (some chopped in half).
  9. Share and enjoy!

As you can see, Sarah’s looked a lot better than mine! This was a test run, and now that I know it works and tastes amazing, I can play around with the presentation next time!

I made a few tweeks to mine. I didn’t put mini eggs IN the cheesecake because we aren’t huge chocolate fans ( yes I know, we are weird.)

Instead of lemon juice, I added a few drops of caramel flavoring instead. (YUM)

I didn’t put whipped cream on the top of the cheesecake. I just plonked a whole bag of the Mini Mini eggs ( is that what they are called?) on top.

This recipe is by far THE best I no bake cheesecake recipe I have found. Its quick, Its simple and its bloody Tasty. It give room for you to make it your own. Strip it to the bare minimum and you can adapt it for any occasion. It also doesn’t use any gelatin so it’s suitable for vegetarians. Win win win! I feel I shall be using this for years to come.
